How to cook Ghanaian Jollof rice

Jollof Rice originated as a Senegalese stew. It is tomato-sauced rice that’s served with meat or fish. This is an easy guide on how to cook Ghanaian Jollof Rice. This meal’s authenticity is incredible.

Essence of Ingredients

Tomato & Tomato Puree: Some people prefer to use fresh tomatoes instead of Tomato puree as base, the truth is you can try any or even combine both, once you find the unique taste you want, you can pick up from there.

Chilli Powder: Chili powder gives your Jollof a hot taste.

Spices: Stock powder, onions, ginger, spring onions and garlic primarily used to flovour the Jollof rice.

Oil: Sunflower oil is healthy and the most crucial element of all, the rice, make sure you use very good rice. I recommend long grain rice.

Preparing Jollof Rice

Every good Jollof rice has to have a compliment. In this easy guide we will use meat and chicken, so we’ll see how it tastes by the end of this easy guide on how to make Jollof rice in Ghana.

How to cook Ghanaian Jollof rice

Step 1. Cut some fresh onions, ginger, pepper, spring onions and garlic to small pieces into your blender and blend it all. Pour the spice puree into a cooking bowl containing the meat and chicken.

Step 2. Season the meat with salt and Maggi cubes.

Step 3. Remove the meat from the residual when it has finished cooking.

Step 4. Fry the meat in oil until it is done, then remove it.

Step 4. Put your sliced onions in the oil after frying. When the onion is frying, add tomato puree.

Step 5. Cut some fresh onions, pepper, garlic, onions, and ginger and blend into a smooth paste while the onion is cooking with the tomato mixture.

Step 6. When the onions are starting to brown, add the smooth paste and stir constantly.

Step 7. Cook for a further 5 minutes after adding some salt, curry cubes, and curry powder.

Step 8. Add your Rice and stir, then allow to boil.

Step 9. Add Veges and fried meat when it is about done, mix and stir.

Step 10. After a few minutes, your Jollof will be ready to serve.


The amount of chili depends on how much chili you like.

Unless you are using perfume rice, you’ll need to wash the rice.

Fried meat is easier and faster to deal with.

When you notice that you have a lot of tomato than rice, just add a little more rice immediately, stir and turn down your cooking fire.

Pour in your chopped spring onions just to add some colour variation as well as spice up the Jollof.

Cooking Duration

Cooking Jollof should take about 30 minutes to 45 minutes.
